What do you do when you want to eat something sweet and it’s not fruit? And how to be sugar-free, low-calorie, healthy, vegan and gluten-free? When I hear these questions, I just smile. Yes, I love fruit and every day our menu must include fresh fruit – so we get enough sweetness. But I often make quick low-calorie desserts for our snacks during the day. A chia pudding can be the perfect low-calorie healthy dessert if the ingredients are combined correctly!
The recipe for chia pudding “Cherry time” is my favorite recipe for raw low-calorie healthy vegan without gluten dessert! Since I make raw cashew milk ”Danara” almost every day, I always have a jar of soaked cashew nuts in water in the fridge. /The recipe for raw cashew milk ”Danara” can be found in the category Drinks./ So I can quickly and easily prepare chia pudding – I just mix nut milk and chia seeds. I love the combination of banana and Ceylon cinnamon flavors, which gives a light and warm tropical scent. The natural sweetness of bananas is enhanced by the subtle spiciness of Ceylon cinnamon and gives a pleasant sweetness to chia pudding. Carob flour /locust bean flour/ gives a pleasant chocolate color and taste – the perfect alternative to cocoa for people with cocoa allergies like me. And sweet cherries with subtle acidity are a wonderful addition to chia pudding and cinnamon sauce.
I make sure to freeze sweet cherries from our garden so that I can prepare Chia pudding “Cherry time” for special moments at any time of the year. I also prepare this dessert for guests who refuse to even try healthy vegan food. Thus prepared chia pudding “Cherry time” can be cooled for 1 hour and served as a healthy vegan alternative to ice cream.

INGREDIENTS
360 ml. raw cashew milk Danara – homemade
the recipe is available in the Drinks category40 g chia seeds
150 g pitted cherries
can be replaced with frozen cherries- cinnamon sauce
100 g banana pieces
20 ml. raw cashew milk Danara – homemade
the recipe is available in the Drinks category25 g carob flour /locust bean flour/
5 g cinnamon Ceylon powder
COOKING INSTRUCTIONS
- In a bowl I put the cashew milk and chia seeds, mix well and set aside for 15 minutes – during this time the chia seeds swell and absorb all the liquid from the nut milk.
- With a potato masher, I mash the banana pieces into a puree, add the nut milk carob flour /locust bean flour/and Ceylon cinnamon. I mix well until I get a smooth homogeneous mixture.
- I wash the cherries with water and drain well. With a sharp knife I cut each cherry into 2 halves and carefully remove the stone with the tip of a knife.
- I serve in suitable cups – at the bottom of the cup I put the chia pudding, then I put the cinnamon sauce and on top I add the chopped cherries.
